Replace Bread with a Healthy Option by Preparing Gluten-Free Doughs at Home

If you’re on a gluten-free diet to heal your digestion and take a break from grains, like Paleo, AIP, or SCD diets, these grain-free waffles made with coconut flour are the quickest option for a healthy sandwich.

There are gluten-free bread recipes, but when I’m in a hurry, these waffles are my go-to solution.

Ingredients for the Waffle Batter:

  • 1 cup coconut flour
  • 1/4 teaspoon baking soda + 2 tablespoons lemon juice
  • 8 eggs
  • 1/2 teaspoon salt (or to taste)
  • 3/4 cup almond/coconut milk
  • 50g soft or melted coconut butter

Beat the eggs, then add the baking soda, which will immediately react with the fresh citrus juice. Using a mixer on low speed, add the milk, salt, and softened coconut butter. Finally, incorporate the coconut flour.

If you’re short on time, the dough won’t spoil if you mix all the ingredients at once. The recipe is very simple and forgiving.

Heat the waffle maker, grease it with butter or coconut oil, and bake them one at a time according to your waffle maker’s usual settings.

In the pictures, I served mine with homemade pâté, garlic, and pickles. Most of the time, I use them for a quick sandwich with ham and salad for lunch, or as a savory waffle for breakfast alongside eggs.
