Easy recipe for gluten-free pancakes with bananas

Gluten-free, with just 3-4 ingredients. Lactose-free, grain-free, and sugar-free, suitable for anti-inflammatory diets.

The rule is very simple: a ripe banana is mixed with one egg and one tablespoon of coconut flour. Stir until a smooth batter forms. Honey is optional, depending on your preference, as ripe bananas are already sweet. For each additional banana, add another egg and a tablespoon of coconut flour.

Ingredients for Gluten-Free Pancakes:

  • 1 banana
  • 1 egg
  • 1 tablespoon coconut flour
  • 1 teaspoon honey (optional)

Mix all the ingredients in a food processor, mixer, or manually with a fork. The batter is enough for 4-5 medium-sized pancakes, about 10 cm in diameter.

It’s very important to use an electric griddle to cook the pancake batter. On a stovetop pan, they stick and break easily when flipping. The griddle heats evenly, and they cook better. Flip them after 3 minutes, when they feel done on one side, and they won’t fall apart.

I use very ripe bananas because they’re naturally sweet and aromatic, perfect for sweet pancakes with a strong banana flavor.

Cook them on both sides on a preheated electric griddle.

I love serving them right away with acacia honey.
